We use the sensitometers and densitometers in school, and I like using them, but does anyone use them as standard practice?

only used them when I worked in a photo finishing lab where the system worked on a replenishment basis. The current stock of B&W papers available are, generally speaking, so stable batch to batch that I don't worry about calibrating to each new box I purchase: colour is a whole different story but I outlab all of mine anyway!

I'm a photographer for a state university. When I'm not out actually taking pictures or on the computer (surfing RC.com), I spend quite a bit of time printing both B/W and color, and no, I don't use a sensitometer or densitometer. We have some in a box somewhere but I know from experience where to start with each of the films and papers that we use, and then I adjust from the results to fine tune the prints to what I want. For beginners they can help, but for me they are not worth the trouble. My 2 cents.
