I've seen Exum guides providing instruction at the Hoback Shield just south of Jackson Hole, Wyoming. They were preparing a crew for an ascent of the Grand Teton. Exum has a pretty good program for different levels of experience and I've heard a lot of compliments from people who have done an Exum expedition. Check their site, it will give you some background to compare with other guide outfits or gym options.
