School me on SoCal climbing (and backpacking)

I'm anticipating a few backpacking and climbing trips in southern california over the next year or so. My girlfriend has just moved to San Diego for grad school. I've recently had the chance to take her on a few climbs and a hiking trip in fairly rugged and remote backcountry (over here in the northeast), and she's very interested in doing some more.

Obviously Joshua Tree comes immediatly to mind -- beautiful country to camp in and explore, and copius climbing...

What other recommendations do people have for SoCal?

She's an eager but totally inexperienced beginner. I'm a solid moderate climber, comfortable leading gunks/dacks 5.6/5.7, and some solid experience on sandstone (Red Rocks). My preferred style is long moderate leads away from the crowds, but obviously we'll be more focused on single pitch and TR for the moment.

She's also an eager but inexperienced hiker, but she's totally game for the hard stuff, I think.

So, any climbing recommendations? and any tips on places that are just plain fun to explore and hike in? any tips on Mexico?
