Actually it was pumpkin seeds, not pumpkin. But pumpkin mush sounds good in it too!

I've tried using it in banana bread, replacing half the white flour for this, but it didn't give it much of a flavour difference. I'm a little worried to go 100% with this in case I end up with a couple of hard bricks of banana bread though.

Spelt is basically wheat, so you shouldn't have any problem substituting whole wheat flour with spelt flour, especially in recipes like scones, where you add baking soda/baking powder for rising, and don't rely on yeast to do it's magic with the gluten. Now, if you are trying to substitute WHITE flour with whole-grain spelt flour in a yeast-type bread, with no other leavening, then you definitely need some tinkering.

Pumpkin seeds and apricot sounds great, too. And I have a whole bag of them-- I add some to my bread sometimes.

That's great that D. has moved beyond his "I am not a free source of labor!" stance.

Also, in keeping with the last 2 posts, it's great that he can tweak traditional masculinity rolls by cooking. I always liked dinner rolls better than gender rolls anyway.

Spelt is basically wheat, so you shouldn't have any problem substituting whole wheat flour with spelt flour, especially in recipes like scones, where you add baking soda/baking powder for rising, and don't rely on yeast to do it's magic with the gluten. Yeah, the banana bread calls for white flour. My mother told me that you can usually get away with substituting ~50% of the white flour for whole wheat in a recipe, but things have a hard time getting fluffy with much more.
