Try this site : http://www.canyoneeringusa.com/utah/

I've done only a few (subway, ding & dang, little wild horse & bell, and crack canyons), but would like to do more if you're ever looking for people to join you. I have two projects in St. George, so I could schedule meetings around a weekend down there.

Leprechaun Canyon, Shillelagh Canyon, and Blarney Canyon South of Hanksville, UT are some nice ones. (Haven't been to them yet, but I am planning a trip soon)

i don't know any specifics but check out Grand Escalante National Monument for the canyoneering opportunities. i have done a bit of canyoneering in Zion with friends who live there and on the way home i drove through escalante and some shops.
