The percentage of gym owners (past or present) on this or any other climbing site is going to be miniscule compared with the number of overall users. If we're not in the business, it's unlikely that we're going to know the details you're looking for, especially on a large scale.
I'd think you'd do better to contact existing climbing gyms outside of your immediate area to see if they're willing to share any information regarding financials.
