Just started climbing and I'm looking to learn enough to do some simple top-roping. Any book recommendations with info about anchoring, techniques and equipment?

I'm new myself. I think the following 3 books will be all you will ever need to buy to have a complete library on the topic. 1. How to Rock Climb, by John Long 2. Already mentioned (one of the best on anchors) is Rock Climbing Anchors, by Craig Luebben- R.I.P. 3. And probably one of the best and most indispensable guides on the sport, The Mountaineering Handbook, by Craig Connally. This book breaks with a lot of tradition regarding anchors and is so good it is even quoted in John Longs book. This or John Longs book would be my first purchase if I were buying just one..... but I would buy used and get them all and you'll never need to purchase another technical guide again.

The Freedom of the Hills (Maybe more than you're looking for, but a great reference for all things climbing/mountaineering)
