So far I've been to a few gyms in NYC and been disappointed with all of them. You folks have any favorites?

You have the choice between moderately overpriced craptastic and hugely overpriced nice. Or you can go to NJRG in NJ about 20 minutes if you drive with NO traffic which isn't going to happen in the evenings or Gravity Vault which is about a 25 minute drive with no traffic. With traffic which will be every evening.... 2 hours? Times from the Lincon Tunnel and GWB respectively. Or you can spend the hour and a half and get to the Gunks on the weekends ;) Take the bus!

The Manhattan Plaza Gym is near Port Authority; it's good for weekday bouldering/short climbs workout. New Rochelle gym is good for rainy weekends, it has nice climbing and leading routes. We usually take Metro North train from Grand Central (30min, every .5h on Sat, 1h on Sun) to New Rochelle and bike 5min (or walk 10min) to the gym.
