I only use 60's now, but if the route only needs a 40, I just cut off the excess to save on weight.

My climbing buddy and I have one each of 50, 55, and 60 m ropes between us. The 50 is mine and we climb on it quite frequently. I've decided that when I replace my 50 it will be either a 60 or 70. However, most sport climbing locations and traditional routes that we climb can be done with a 50 m rope just fine. Hope that helps.

I would say if the area you are setting routes at is better suited to using 60 meter ropes then set your anchors accordingly. As everyone else has stated just make sure it is noted in the guide.
